Spicey Chicken Salad (Laab Gai) |

- 500 gm Minced chicken
- 4 tblsp Uncooked rice, baked in the oven and ground fine
- 2 tblsp Chopped shallots
- 3 tblsp Fish sauce
- 4 tblsp Lemon juice
- 1 tblsp Dried red chili, chopped fine
- 3 tblsp Chopped fresh coriander leaves
- 1/2 tsp Sugar
- 3 tblsp Chopped mint leaves
Cook the minced chicken in a non-stick pan without oil (dry fry).
Put the cooked chicken in a bowl and mix in the other ingredients, except the mint. Mix well and check seasoning and lemon juice.
Sprinkle on the mint leaves before serving. |
