Isaan Spicy Dipping Sauce PDF Print E-mail

Ingredients
  • 6 Garlic cloves, crushed
  • 1 tblsp Shallots, sliced
  • 1 tsp Galangal, chopped
  • 2 tblsp Anchovies, finely chopped
  • 1 tblsp Lemon juice
  • 1 Dried red chili, pounded
  • 1 Kaffir lime leaf, chopped
  • 1/2 Stalk of lemon grass, sliced finely

Dry fry the garlic, shallots and galangal for 3 minutes over a medium heat.. Chop finely and pound with the remaining ingredients in a mortar. Serve.
