Broiled Beef Tongue PDF Print E-mail

  • 450 gm Whole beef tongue
  • 1 tsp Salt
  • 1/2 tsp Sugar
  • 1/4 tsp White soya sauce
  • 1 tsp M.S.G. (optional)

Naam Chim Sauce

  • 1 tblsp Ground dried red chilies
  • 1 tblsp Uncooked rice, roasted and ground to a fine powder
  • 1/2 tblsp Lemon juice
  • 1 tsp Sliced shallots
  • 2 tblsp Fish sauce
  • 1/2 tsp Spring onions, chopped
  • 1/8 tsp Sugar

Mix all the Naam Chim Sauce ingredients together.

Mix/coat the beef tongue with the salt, sugar, white soya sauce and M.S.G.(if used). Leave to marinate for at least one hour.

Broil the beef tongue in a medium hot over for 20 minutes until cooked. Slice and serve with the Naam Chim Sauce.

There is a lot missing here. Whole beef tongue will not be done in 20 minutes.
Normally it's pre-cooked or pickled, smoked etc, and skinned. Shouldn't it be
sliced first?

I would add this to the recipe. Boil whole tongue in well
salted and seasoned water (star anise, coriander seeds, cinnamon, onion, cloves,
cilantro, etc.) till just tender - 1-2 hours. Cool and remove skin and fatty
tissue. Slice tongue into 1/2 inch slices. Then proceed with
marinade.

Herbs are missing too - but I think mint or basil would be
appropriate accompaniments.
